“Asian”-ish Salad – MirePoix Vegas Style!
I sort of invented a salad that has Asian characteristics and turned out to be quite good. I’m on one of my perpetual diets, and as diets go, this one is tolerable. Okay, more than tolerable. It’s actually good! I’ll let you know how it’s working in a month or so.
Meanwhile, I’m trying to create recipes that are fully satisfying – in taste and satiety – but won’t make me feel like I’m on a “diet.” And it will also allow me to enjoy my wine. Here’s a great recipe that I have created and used in various forms, and as is the usual case with my recipes, you’ll have to juggle the ingredients to find out what’s best for you.
MirePoix Vegas “Asian” Salad
Handful of Spring Mix Salad
Half a handful of Trader Joe’s Stir-Fry Mix (cabbage, celery, carrots, etc.)
Spring onions/Scallions
Finely chopped ginger – not more than a tsp or else it’ll overwhelm
A tablespoon or two of Roasted Sesame Oil
Juice of one fresh lime
Choice of poultry: pan-fried chicken thighs (sliced, pictured), ground turkey, ground chicken, chicken breast, etc.
Toss all vegetable ingredients together and top with poultry. Use your favorite salt to season to taste – avoid regular table salt. I recommend Gray Salt, Pink Salt, Kosher Salt, Cyprus Black Salt (Indian Black Salt has too distinctive a flavor), or any regular minimally-processed sea salts.
Some options can be the additions of Napa Cabbage, Garlic, Nori, Kelp, or a touch of Wasabi to brighten the flavor. For what it’s worth, I’ve been making different variations of this salad all summer and have found that it’s filling, delicious, easy to make, inexpensive, and a lot of fun in the summer heat. My favorite poultry topping is ground turkey; it seems to bring more flavor than even chicken thighs. This salad also makes a great pairing with a summer white wine or a Rosé.
